Meadow Creek Auction

Our annual trip to Meadow Creek has become a fun tradition for us. Melvin always schedules Dealer Day on a Thursday, the same week they host a KCBS judging class, a benefit auction, and Meadow Creek Open House. The judging class is Friday morning; in the afternoon, they always have a large benefit auction. The food stand is open all day where they sell barbecue lunches, Amish-made pies and ice cream, and other goodies as a fund-raiser for medical bills. Open House is always a big deal on Saturday, where Meadow Creek gives away thousands of barbecue meals.

The meat for the judging class, food stand, and open house is cooked on-site with Meadow Creek chicken cookers and pig roasters and a Southern Pride smoker.

Friday and Saturday they had some people demoing different smokers and grills, including Big Green Eggs and a Meadow Creek TS250 Smoker and a TS70P Smoker.

Meadow Creek PR60GT Pig Cooker Story

Smoked Ribs

We just returned from a vacation up north, visiting family and friends. Part of our trip included a family reunion on my wife’s side in upstate New York. We borrowed a friend’s Meadow Creek PR60GT Pig Roaster and I cooked 5 pork butts, 4 chickens, and 2 slabs of baby back ribs.

The event was on Tuesday and I cooked on Monday because I didn’t want to cook all through the night or deal with meat in the morning while I could be relaxing with family. It was rainy the day I cooked, so we put up a tent with one side panel to block the breeze, and it worked very nicely.

My friend who owns the pig roaster ordered it custom without a drip pan or a stainless steel grate. Instead he has a pan with a slanted bottom, and he uses it mostly for whole pigs. I didn’t want to fry the meat, so we laid it on several oven racks inside the pan. He doesn’t have a chip tray, so I filled foil pouches with wood chips and chunks to make my smoke. The pouches worked okay once I figured out how to make it work, but it’s not the ideal way to make smoke in a Meadow Creek Pig Roaster! However, it was a fun challenge and I enjoyed cooking another batch of outrageous barbecue.

In April we enjoyed our annual trip to Meadow Creek for the Dealer Day and public open house. It was nice to spend a day with Melvin and the dealers learning about the future of Meadow Creek and how we can better serve our customers. Besides, we got to hang around some smoke and great barbecue for a couple of days.

Can a Meadow Creek Pig Roaster Cook Low and Slow?

I have been tempted to rename the Meadow Creek Pig Roaster series, because it confuses some people who don’t know how they work. For instance, a common question goes something like this: Can a Meadow Creek Pig Roaster cook low and slow? The answer is yes, you absolutely can.

Meadow Creek has been building pig roasters since 1980. They were first designed to cook a whole pig, and they certainly do a great job cooking pigs. There is really no easier way to roast a pig than on a Meadow Creek Pig Roaster.

However, they are also a fantastic choice for about any kind of meat you want to cook low and slow. The PR60 and PR72 have lots of room and they make it easy to crank out barbecue perfection. Or you can add a grill pan and grill tons of burgers and steaks. So these cookers are extremely versatile.

An Embarrassing Confession

Last week we finally did our first cook on a Meadow Creek pig roaster.

After selling these cookers for almost two years and watching the pig cookers become our best sellers, Marlin was eager to get started!

We cooked 60 lbs. of chicken leg quarters, a bunch of potato wedges, and a couple boneless turkey breasts. On the side, we cooked a couple small pizzas for treats during the cook.  🙂

The BBQ turned out great in spite of some rain. Thankfully, Marlin had his canopy set up and everything went well.
