“When I Get Big…”

I have an SQ36 Smoker for my own personal use. The SQ36 is great for cooking in the back yard, front yard, side yard, or on the porch roof. I love it. I can pull it out onto the grass, fire it up, and have a nice little time smoking with the boys.

But someday, when I “get big”, I would really like to have a TS250 smoker on a trailer. It would have a BBQ42 chicken cooker mounted to the front. The chicken cooker would be insulated so I could grill more than twice as much meat with the same amount of charcoal. The firebox on the smoker would be insulated too. The paint outside the firebox would stay nice a lot longer with less maintenance because I invested in a double wall and insulation.

Instead of the expanded metal work shelves on the sides of the smoker, I would pay a little more money to get stainless steel shelves to keep grease and juice from dripping down onto the fender when I’m cooking and slide out the grate.

I would use my smoker to cook for family reunions and church picnics. Maybe occasionally I would pull it around to various fire departments and cook for the guys there. I would love to also get into fund-raisers for non-profits, such as the Loaves & Fishes magazine for prisoners or for the brother in our church that’s a missionary in Haiti. Or cook food for some people who lost their houses in the tornadoes close to where I live.

When it gets warm, I would get a temporary permit, pull my TS250 smoker down-town for the day and cook barbecue for Pikeville. I’d make a couple hundred dollars and put it in savings for my next birthday.

Some days I would simply fire it up to cook a little food for my family. I would cook extra and put some in the fridge and freezer. I would share some with my friends who appreciate real barbecue.

On March 5, the day before my birthday, I would park my TS250 at my brother’s house. Maybe he would smoke me some ribs.

In the mean time, I plan to have fun anyway. Tomorrow is my birthday and I hear there’s grilled chicken on the menu.

    Oh Man! “When I get big.” I’ve dreamt about a rig that would have dedicated smokers per meat type; pork, birds, beef/deer/elk/etc, fish. This rig would also have one of those awesome chicken grillers. That’s the dream anyway, when I get big. We left our very old, extremely well used smoker in California when we moved to Virginia and haven’t been able to buy a new one yet. Cooking on a kettle grill just isn’t the same.

    I am planning to have a BBQ catering business now. For my “… when I get big moment” I want the TS500 with the BBQ42 attachment. I also want live smoke in the warming box so I can use it to smoke Pork Butts. This smoker would be for a roadside business which is doing great in our area.
